Mountain Apple Stuffed Puppies – Chef Adam Hayes

Red Stag Grill’s “soon to be famous” Mountain Apple Stuffed Puppies recipe by: Executive Chef Adam Hayes – Grand Bohemian Hotel Asheville.

• 4 cups House-Autry hushpuppy mix
• 2T Poultry seasoning
• 2T Rubbed sage
• 1T Fresh sage chopped (if you have it)
• 12 ea WNC Mountain apples (your choice of variety)
• ½ ea Lemon juice (fresh)
• 2 cups Turkey or Chicken stock


1. Mix all dry ingredients together.
2. Grate apples on a standard cheese box grater right into the batter.
3. Add lemon juice. Hold the seeds
4. Gradually add the turkey stock until a thicker batter consistency is reached.
5. Allow to sit for 20 minutes before you fry them.
6. Fry at 325F for 2 minutes or until the inside is cooked through.


Works great to fry them in a turkey fryer after the turkey comes out.
Dip or cover them in turkey gravy.
Should feed 6-8 hungry Thanksgiving bellies.
